Tomorrow is the Fourth of July and our final grilling video is all about the dessert. I’m sure you have a go-to recipe for a delicious summer trifle. Mine involves kiwi, strawberries, and blueberries. But wait until you try this recipe made with peaches, heated to sweet perfection on the grill!
Our next Chef on Deck—Anthony Frank! To kick off our series, Chef Anthony showed us the best way to fire up your charcoal grill/smoker. Today, he’s using that hot grill to cook his peaches for this delicious recipe. But there’s another secret ingredient you may not be able to tell from the picture. Click on his video grilling demonstration to find out exactly what it is!
- 6 large, fresh peaches
- 1 Tbsp lemon juice
- 2 8-oz containers of plain yogurt
- 2 Tbsp honey
- 1 Tbsp vanilla
- 1 tsp lemon zest
- 1 10-inch prepared angel food cake
- Cut peaches in half (and remove pits)
- Gently toss slices in lemon juice
- Put one cup of peaches in a blender and blend until smooth
- Place remaining peaches on the grill and cook until soft
- In the meantime, mix yogurt, honey, vanilla, and peach puree in a bowl (lemon zest, optional)
- Cut the angel food cake into squares and place half in the bottom of a trifle dish or large glass bowl
- Spoon half of the peach slices over the cake and cover with half of the yogurt mixture
- Place remaining cake squares over yogurt
- Top with peaches, reserving 5 or 6 slices garnish
- Cover with remaining yogurt mixture
- Garnish with peace slices.
- Refrigerate until ready to serve
